A.D. Laws Bottled in Bond Secale Rye is made from 96% rye (50% of which is malted) and 4% malted barley, open-air fermented and then aged over 4 years before being bottled at the requisite 100 proof. The term “Secale Rye” is a direct reference to the Latin name for rye grain: “secale cereale.”

Law’s Secale Rye Whiskey is aged over four years to meet the standards of the Bottled in Bond Act of 1897. Bottled in Bond requires that the whiskey be a product of a single season, using the grain of a single season, made by one distiller at a single distillery, and aged at least four years in a federal government-bonded warehouse. This whiskey is then cut and bottled at 100 proof (50% ABV). Distilled from a mashbill of 95% heirloom rye and 5% heirloom barley. The first Bottled in Bond Rye in Colorado history.
A.D. Laws Secale Rye Bottled in Bond Rye Whiskey Tasting Notes
Nose: On the nose, this bonded rye was markedly unusual, with aromas of a sweet, freshly mown lawn just under delicate notes of cotton candy and light caramel.
Palate: The mouthfeel was strong at the tip of the tongue, as well as the front of the gums, but not unpleasant and certainly not a burn.
Finish: The finish was lovely and long, beginning with toasted grain, tobacco and leather before evolving to espresso and very dark chocolate. The dark coffee lingered and faded to a pleasant nuttiness. Notably, there was very little sweetness to the finish, but instead a lovely cascading array of flavors, each a pure as the last.

AD Laws Distillery is centrally located in Denver Colorado in the historic Gates Neighborhood. It’s here where Al Douglas Laws, founder and creative visionalry behind Laws Whiskey House, takes an obsessive, hands-on approach to every aspect of whiskey production as he mills the grains, combines them and cooks them to create an incredibly complex sour mash.
