Abasolo, El Whisky de Mexico, from Jilotepec de Abasolo, just north of Mexico City, is made entirely from heritage corn that has undergone nixtamalization, like masa. The 86-proof spirit — made in copper pot stills and aged in oak — is pale gold, has a toasty aroma and some honeyed sweetness that tames the alcohol.

Abasolo El Whisky de Mexico is crafted and distilled from the finest, non-GMO, Cacahuazintle (ka-ka-wa-sin-‘tle) corn which has been cultivated over generations by local farmers for its distinct, extraordinary flavor. More than 7,000 years ago, corn (mahiz) was developed by the indigenous people of Mexico. More than just a crop, corn is the cultural foundation and historical identity of the country. Through the unique use of Nixtamalization – a 4,000 year old cooking technique- the deepest notes of these ancestral ingredients are uncovered. There is no whisky in the world with a process or taste profile like Abasolo. Rich and smooth with deep, intriguing notes of roasted grain, vanilla, and honey that are unlike any other.
