Description
All grapes are selected and hand picked exclusively in our hilltop Piedmontese vineyards located in the provinces of Cuneo, Asti and Alessandria. The first fermentation takes place in temperature controlled stainless-steel tanks. According to the classic method the second fermentation takes place in the bottle with yeast contact extended for at least 30 months, followed by traditional hand riddling (remuage) pupitres and dégorgement à la glace. A period of bottle aging follows.
